Ingredients \ 3 pax
  • 4 bananas (or plantains)
  • 1 cup ground coconut
  • 0.5 cup orange juice
  • 0.25 cup sugar
  • 3 tbsp. unsalted butter
  • 2 lemons
  • cinnamon
  • honey
Instructions

Preheat the oven to 200°C. Cut the bananas in half lengthwise, keeping their skin on. Cut lines into the flesh of the bananas, and arrange them onto a baking dish. Pour over the butter, orange, and lemon juice. Sprinkle with cinnamon, brown sugar, and coconut. Bake for 20 mins, remove from the oven and put a little honey on each.
Return to the oven on grill setting and brown the tops.
